Chicken Tinola




2	T.		oil
1	piece		ginger, sliced thin
2	cloves		garlic, crushed
˝			onion, sliced
2	lbs.		boneless, skinless chicken,
			cut into serving pieces
2	small		green papayas, cut into chunks
2-3	cups		water
2	cups	    	malungay leaves, no stems
			or fruit
		    	salt, to taste

A)	Sauté garlic and ginger in oil, add onion.
B)	Add chicken and season with salt.  Cover and 
	simmer for 5-10 minutes.  Add a little water if
	necessary to prevent scorching.
C)	Add papaya.  Cook 5 minutes.
D)	Add water and simmer until chicken and papaya
	are done.
E)	Add malungay leaves (excellent source of vitamin A).
F)	Serve hot with rice.
