Spiedie's (Upstate New York recipe) are best roasted over a charcoal fire. 1 lb. beef -or- pork ¼ cup vinegar ¼ cup oil 3 T. lemon juice 1 T. oregano 1 T. minced onion (dry onion soup could be substituted) ½ tsp. garlic powder ¼ tsp. salt 1/8 tsp. pepper A) Cut meat into bite-sized pieces and set aside. B) Combine rest of ingredients and mix well. Let stand 10 minutes, then pour over meat. Cover and refrigerate overnight. C) Arrange meat onto metal skewers and broil over a hot charcoal fire for about 10 minutes for beef and a little longer for pork - turning often. D) Serve on Italian bread. |
