Haupia (Hawaiian Coconut Pudding)

When I worked in the catering department at BYU-H,
this is the recipe we used.



	


12½	cups		coconut milk
7½	cups		water
3½	cups		sugar
3	cups		cornstarch

A)	Heat coconut milk in a double boiler.  Add
	rest of the ingredients and stir until smooth 
	consistency.
B)	Cook and stir the pudding over a low heat 
	until it is thickened completely.  
C)	Raise the heat and stir constantly 
	(to prevent burning) for approximately 2 minutes.  
D)	Remove from heat and pour into a large pan
	21x11" at least 2" deep.
E)	Let cool until it has set.  Cut into 2" squares.
