Healthy Fried Rice

3	cups		cooked rice, cooled
1	cup		turkey ham
½	cup		chopped onion
¼	cup		slivered water chestnuts (opt.)
1	medium	green bell pepper, diced
1	medium	carrot, diced
2	T.		shoyu
2	T.		oyster sauce
¼	tsp.		pepper

2			eggs, beaten
2	stalks		green onion, thinly sliced

1	tsp.		vegetable oil (for frying)

A)	Combine all ingredients (except eggs, and 
	green onion) in a large pan.
B)	Stir fry for about 4 minutes until mixture is 
	thoroughly heated.
C)	Add beaten eggs and stir fry until eggs are 
	cooked.
D)	Add green onion and serve.
YIELD:	6 servings
