Island Fruit Calabash



Dressing:
½	cup 	mayonnaise
1	cup	marshmallow creme
1	tsp.	orange rind, grated
2	T.	orange juice

½	cup	coconut, grated
		whole pineapple (to serve fruit in)
		fruit chunks (from whole pineapple, 
		papaya, banana)

A)	Combine ingredients for dressing.  Beat until
	smooth.  Chill.
B)	Make either a pineapple boat -or- calabash:
	Pineapple Calabash:  Cut 1" across top of upright,
	whole pineapple, leaving greens intact.  Cut out the 
	fruit center, leaving ½" of the fruit inside the rind.
	Pineapple Boat:  Cut whole pineapple in half 
	lengthwise, leaving leaves intact.  Remove fruit from 
	pineapple halves, leaving ½" of fruit inside the rind.
C)	Serve fruit in pineapple shell with dressing.
