Lela's (Filipino) Ginger Fish

Lela was our dear, sweet, househelp when I was a
missionary in the Philippines. This recipe and
lumpia were everyone's favorites.


	


1	big fish (try halibut)

1	medium	onion
4	cloves		garlic
3-4	T.		ginger
1	medium 	red bell pepper
1			carrot, diced

2	T.		shoyu
1	cup		vinegar
2	T.		corn starch
2	T.		brown sugar

A)	Fry the fish.  Remove and set aside.
B)	Sauté the next 5 ingredients.  Add each in the 
	order listed.
C)	Combine the shoyu, vinegar and corn starch.  
	Add to sauté mixture and bring to a boil.
D)	Pour mixture over the fried fish and serve.
